Processing Method:
Other suppliers CLAIM their product is RAW, but only we can verify the temperatures of our process with video evidence. Every single cacao bean used to produce this powder is grown by a cooperative of over 3,000 small farmers in Bali, who wild-harvest cacao pods from their own certified Organic food-forests. Produced with safety in mind at every step, cacao beans from freshly split pods are fermented under control at 40C and then washed in potable water before being solar-dried.
Unlike other “raw” cacao powders made by large processors with high-heat filter presses, our raw cacao nibs are cold-pressed in small batches on proprietary equipment developed specifically for VERIFIED RAW low-temperature processing, under 120°F.
After pressing the butter from the nibs, the concentrated “cake” left behind is low in fat (22%), but not as low as other powders. Why? Because it takes heat to get all the oil out. The cacao cake is cold-milled to a powder and then fine sieved for use as cacao powder. Never touched by high heat, never contaminated by clarifying chemicals or solvents and never force filtered, it retains high levels of nutrients and antioxidants.
Prior to final packing, every lot of cacao is tested at an independent lab for a full microbial analysis.

Verified RAW cacao powder has a distinctive flavor that doesn’t necessarily register as chocolatey as high heat filter pressed processed cacao powders. The flavor profile is green, astringent, pure and fruity. It is noticeably more energizing than a typical cacao powder, so it’s ideal for the Living Foods Community, but specialty chefs and other connoisseurs will be excited to try this totally unique product as well.

Certain chemicals in chocolate may inhibit the natural breakdown of anandamide. This means that natural anandamide (or introduced anandamide) may stick around longer, making us feel good longer, when we eat chocolate.
